When fitting out or renovating your vat room or winery, we advise you to pay particular attention to the fittings that will make cleaning the vat room easier. For this reason, we recommend that you select materials that are easy to soap on floors and walls. This is why the majority of vats and fermenters feature smooth surfaces such as tiles or epoxy paint, for example. Although often more aesthetically pleasing, we don’t recommend porous surfaces, such as wood or other granular materials like concrete or plaster. Last but not least, you’ll want to choose light colors, which will make it easy to check that the vat room is clean.

Although they are becoming increasingly commonplace in all vats and fermenting rooms, some equipment is essential for your production space. These include presses, destemmers, juice reception bins… These will enable you to manage flows and keep your workspace clean.

We recommend a good distribution of water points and central drainage, as well as a system of gutters, siphons covered with grids or movable baskets… These will ensure good drainage management and make your life much easier.

L’isolation et la ventilation:

Particular attention must be paid to the technical properties of the building. This includes good insulation and ventilation of the vat room and, more generally, the wine cellar. This is particularly important for managing the fermentation process, as well as the conservation and aging of wine in barrels or vats. The aim is to achieve the most stable temperature possible. This will reduce technical transfers. Finally, air renewal is a key concept to consider when designing and fitting out vats and wine cellars. Air renewal ensures good site hygiene and the right temperature balance. This can be achieved through subtle systems of windows, loopholes…

Some prefer to produce in a single type of vat, others vary between concrete, limestone cement, stainless steel, steel or even wine fiber, or wood… It all depends on the production, vinification and fermentation system you want for your wine production.

There are a number of different shapes of vat, depending on the amount of space available. In fact, you can compose your vat room in the best possible way by using different shapes of vats:
  • Amphora vats for natural vinification and good thermal inertia.
  • Egg-shaped tanks promote natural stirring.
  • Square wine tanks, to optimize available space.
  • Truncated wine tanks facilitate wine flow and optimize fermentation.
  • These 5-sided corner wine tanks optimize every space in the vat room.
And last but not least, remember to include all the equipment required for proper tank management, depending on the model chosen: hatches, taps, draining system.

Finally, this is one of the most important points that must be a prerequisite for any project to design or fit out a vat room or fermenting room. In fact, although a large part of the project involves safety instructions and equipment for cellar masters and winemakers (safety shoes or boots, etc.), a number of safety features must also be taken into account.
